Inspiring Read – The Edible Selby

edible selbyThe only upside to being sick last week and missing Friday’s market is that I finally got to spend some time with a book I picked up recently.  The Edible Selby is an inspiring tour through kitchens and restaurants around the world by Todd Selby, known for his interiors blog, The Selby.

The thing I really like about this book is that the photos are not the polished ones that you might find in an interiors magazine – the kitchens and spaces featured are shown in all their cluttered, imperfect glory.  Each cook is also asked to do a handwritten and illustrated recipe, which adds a lot of character, and gives an insight into their process and inspirations.  And, did I mention the book also includes fridge magnets?  Can’t beat that!

Maple,Pecan and Olive Oil Blend Granola – This blend of oats, pecans, coconut flakes, sunflower seeds and pepitas, toasted with maple syrup and olive oil is a whole foods, vegan extravaganza!

Double Coconut Blend Granola – Back this week by popular demand! Two times the coconut, two times the delicious flavour! Baked with organic extra virgin coconut oil and containing coconut flakes, cashews, pumpkin seeds – lightly sweetened with maple syrup – this granola is vegan, wholesome and just a touch tropical. An island holiday in a bowl!

Salted Caramel Pecan Blondies – buttery blondies with toasted pecans and caramel bits, finished with a sprinkling of sea salt. Made with almond and coconut flours – completely gluten free and completely delicious.

Coconut Honey Macaroons – Crispy and chewy coconut macaroons sweetened with Nova Scotia honey and organic cane sugar. Drift away on a cloud of coco-nutty goodness.

Mini Banana Layer Cakes with Cream Cheese Frosting – moist banana cake, made with almond flour and lightly sweetened with maple syrup. Topped with cream cheese frosting, this little cake is as cute as a button – and delicious too!

Lemon Curd Bakewell Tarts – Bakewell Tarts are a traditional British sweet. Ours are made with gluten free amaranth, millet and quinoa pastry, filled with a deliciously tangy house-made lemon curd and topped with almond frangipane and a dollop of cream cheese icing.
